Center City District Restaurant Week

Join terra for Center City District Restaurant Week, presented by TD Bank, January 17-22 & 24-29, 2010 . Restaurant Week is a great way to stretch your dollar while dining out! Participating Center City restaurants offer three-course- dinners for about $35 per person. terra, in the spirit of the season, is offering you 4 courses! Woo-hoo! That is right, 4 courses! -baby spinach salad, blue cheese, spiced almonds, mango, apples, red onion, 3 herb vinaigrette

The James Beard Awards! Nominations Still Happening!


On December 31st, nominations for the 2010 James Beard Awards will close.

Have you voted for terra’s Chef Eric yet? No? Why the heck not?

We need everyone, and anyone to vote..So go HERE to see HOW…DO IT!

Now for the “Why?” – well, we asked Chef Eric a few hard-hitting-Katie-Couric-style questions to find out exactly why he should be nominated for this most prestigious award!

First off….Who the $#%& is James Beard?

“A guy who started as a singer, but ended up as a caterer. He was an eccentric personality who brought French cooking to the American middle and upper classes in the 1950s. Many consider him the father of American-style gourmet cooking. His legacy lives on in twenty books, numerous writings, his own foundation, and his foundation’s annual Beard awards in various culinary genres.”

You are a cocky son-of-a-gun to think you deserve the award…Give me three reasons why!?
“I deserve this award because: I can cook, people love my food, and i will represent the future of new american cooking!”

When you win this award…What would you do? Hock it?
“If I got the award the first thing I would do…is to go to Disney World! Just kidding, I would host a party to showcase my food.”

I bet you would become an egomaniac if you won this trophy…
“It would definetly go to my head! It would validate everything i’ve worked for, and I might ask for a raise… I would deserve it! This would bring national attention to wherever I worked!

If part of the requirement to getting this nomination was eating human flesh, how would you prepare it? What side goes best with person meat?
“Hmmm….It depends on what part…A human would be like a cow, needing different cooking methods for different parts. The ribs would need quick cooking with some fava beans and chaniti. The shoulder or leg would need braised for hours, maybe make a taco out of it.

On that note, I am writing a movie about vegatarian zombies…Would you like to do a cameo?
“I would def do the cameo, as long as I looked really messed up, i would lead the zombies right to Green Meadow Farms to eat up all the tasty veggies.”

Well there you have it folks…I think some moving reasons why we have to all work hard to nominate Chef Eric! Let’s do it!


Local Sources, Local Food, Local Producers


at terra, we ALWAYS try to use products from local sources, especially veggie’s and cheese’s.


Chef Eric seeks out local producers of everything that we serve on our menu.

Often, we get products from the fantastic Green Meadow Farms, who provide us with such fine items as local cheddar, savoy spinach, parsnips, turkey (as we served on Thanksgiving), celeriac, salsify, herbs, honey, and the list goes on and on and on….!

We also work with Blue Moon Acres for different micro greens.

Whenever he can, Chef Eric will get different products from the fair food stand and other farmers from Lancaster (the salami in our World Series Sliders was from Lancaster). We are also lucky to have found a great New Jersey provider of “wild caught” scallops.

If you know of any good local providers we haven’t mentioned, or have suggestions for any new local providers, let us know! We are always looking for new providers of quality food.



The Bourbon Dinner

terra is proud to present our FIRST Bourbon Dinner!

This delicious meal will feature incredible food MADE with bourbon, and with each course paired with a bourbon shot or drink by an expert! We are serving it all up on Tuesday, December 15th!

Amuse Bouche: Steak Tartare with Bakers Bourbon Caviar

First Course: Arugula, Humboldt Fog Cheese, Jim Beam Soaked Cranberries, Roasted Parsnips, House Bacon, Ginger Bourbon Vinaigrette

Second Course: Smoked Pork Belly, Chestnut Bellini, Maple Knob Creek Bourbon Foam, Pickled Beets

Third Course: Pan Seared Lamb Chops, Bookers Bourbon Grits, Szechwan Peppercorn Jus.

Dessert Course: Black Forest Gateau, Coffee Granita, Jim Beam Red Stag Creme Angalise

This menu, as we said, will also feature some delicious bourbon drinks that are being developed by some local bourbon experts. AND – for the vegetarians in the mix, Chef Eric will sub tofu for the amuse and seitan for the next 3 courses.

You get this incredible meal, plus drinks – for only $55! Dirt cheap! Gratuity and tax not included… The dinner will start at 6:30 SHARP!

Changes To The Menu !!!!


So we have changed up our menu a bit at terra….

Nothing to crazy, but we made some tiny alterations thanks to the input and ideas of YOU, our customers! (Keep the feedback on the feedbag coming!)

Check out the menu HERE…And here are some explanations:

- The new duck dish! It is a play on duck l’orange (with a preserved orange sauce – actually house preserved! ) and highlights squash and leeks. (Pictured at left)

- The burger changed, we wanted to do something a little more approachable and increase the moistness (people at terra tend to order them med. well or well) by adding the tomato coleslaw.

- The pizza changed because figs are no longer in season. Pear was the substitute after we did an exhaustive taste test and pear won.

Now you can see that most of your favorites are still on the menu. We won’t go through a huge menu change until Winter!


All About Last Night: the terra test tweet-up

A few weeks ago, a friend of ours on Twitter suggested having a tweet-up at terra.

For those of you not familiar with the concept, a tweet-up is when Twitter fans all gather in one spot and converse face-to-face, enjoy some food and drink, and tweet up a storm. Good times…

We loved the idea, but we weren’t sure if terra was the right venue. How would it work, did we have the space, would anyone come, what color shirt were we going to wear, why did my Blackberry keep freezing on me…So many questions!

So, we tossed it around with Chef Eric, the staff, our bosses, and our pets – and decided to BETA test it! We would do a tiny tweet-up and see if it flew! We drafted a few close friends to help us in our trial, people we knew would treat us with kid gloves and give us some great feedback.

What we found out was fantastic. The assembled had a great time, new friends were made, faces were put with names, and spirited discussion was had by all. We talked about our online stalkers, crushes, and mentors. We compared influencers, and made recommendations. Most importantly, we ate and drank a bit – and had a great great time. A lot of positivity, some to tummy hurting laughter, and good vibes were all served with heaps of pork chops, sliders, hoe cakes, and other terra treats.

Thanks so much to everyone who cut into their busy schedules to sup with us. We love you all!

With this successful tiny tweet-up under our belt, we have decided to move ahead with a much larger event. One open to the public and that will embrace the entire twitterverse. Birthday Boys!

We have reason to celebrate!


Two of the most important men in terra’s operations have birthdays!

Owner Stephen Carlino (turning 28) and Chef Eric Paraskevas (turning 27) celebrate their birthdays this Saturday, November 7th!

We consulted with Madame Xanadu, our occult and horoscope expert, to find out what makes a man born on Nov 7th tick…

“November 7th person is ruled by Neptune which causes this person to stand beyond the ordinary range of most peoples perceptions,” explained Xanadu. “This person is unduly inquisitive and possesses a large amount of technical knowledge. As a romantic partner or mate, the November 7th person can deliver unusual,exiting and sensual experiences. The ideal mate of this person would be able calm their mates restlessness.”

Fascinating!

Madame Xanadu also said, “Looking into the mists of the future, these Nov 7th birthday boys should use their common sense to warn us of the validity of prophecies containing seven headed beasts.”

At this point, we took back our money and told this smelly carnie to take a hike…Occultism cancelled!

Now, after a little googling – we found some other famous people born on Nov 7th: Billy Graham, Joni Mitchell, Johnny Rivers, Al Hirt, King Kong Bundy, Dana Plato, Nick Gilder.

Interesting enough, most of them are dead (medically or career-wise) – so we guess this really makes it Stephen and Eric’s day!
